Homemade Salted Caramel

Homemade salted caramel is liquid gold I promise. This caramel recipe is so simple and all you need  is 5 ingredients, a pan and 15 minutes of your time. No fancy equipment for this recipe. Simple right?

The caramel is so decadent, sweet, sticky, buttery and tastes amazing on anything it touches! It takes a some care in making it but it’s totally worth it.

WHAT YOU’LL NEED TO MAKE HOMEMADE SALTED CARAMEL

HOW TO MAKE  HOMEMADE SALTED CARAMEL

1. Add the sugar and water into a medium pan and stir until the sugar is dissolved. Place the mixture over medium heat. Be sure to use a heavy pan when making caramel as this eliminates hotspots and gives the caramel a good consistency without burning it.

2. Cook until the sugar mixture becomes a golden amber colour then remove from heat and whisk in the cream. Make sure to use heat stable cream. Add in the butter and stir. Always use room temperature cream and butter.

3. Place the mixture on a medium low heat and continue whisking. Cook for an additional 3 minutes.

4. Remove from heat and add in the salt. Transfer the mixture in a bowl and set aside to cool. Caramel thickens up quite a bit after cooling so you end up with a  lovely smooth and silky consistency. 

Recipes to use caramel sauce in: Filling cake, adding to cinnamon rolls, poured over ice cream and you might as well eat it as is. Anything that makes you happy!

TIPS FOR THIS RECIPE

  • Avoid stirring! After the sugar has dissolved don’t stir the mixture as this will cause crystals to form.
  • Watch the colour of the caramel very keenly. The amber colour gives a beautiful flavour. Anything darker will cause the caramel to burn. Things move really fast from a nice amber colour to burnt and smoking so keep a good eye on it.
  • Always use room temperature butter and cream.
  • Don’t forget the salt ! Salt really deepens the flavour profile and will keep your caramel from tasting too sweet.
  • Caramel keeps for up to a month in the refrigerator so you can always prepare it ahead of time.
